    What makes good quality vanilla?

    Madagascar Bourbon vanilla is considered the gold standard, with its rich, creamy flavour profile. Tahitian vanilla offers more floral notes, while Mexican vanilla tends to be spicier. The specific soil where beans are grown significantly impacts flavour complexity.

    High-quality vanilla undergoes a meticulous months-long curing process. Beans are blanched, then alternately sweated and dried repeatedly to develop the vanillin compounds that create vanilla’s signature flavour. Properly cured beans will be dark, oily, and pliable rather than dry or brittle.

    Premium beans contain higher concentrations of vanillin and other flavour compounds like vanillic acid and p-hydroxybenzaldehyde. These create depth beyond just sweetness.

    Look for beans that are plump, glossy, and flexible. They should have a strong aroma and may have white vanillin crystals on the surface, which is actually a good sign. Avoid beans that are dry, cracked, or have mold.

    For vanilla extract, the extraction method matters. Quality extracts use a proper alcohol-to-bean ratio and adequate aging time (months to years) to fully develop flavour complexity.

    Be aware! While vanillin can be synthesized from wood pulp or petroleum, natural vanilla contains hundreds of additional compounds that create its complex flavour profile.
